mobile outlook problem

I received a new xv6900 smartphone at work that uses Windows Mobile. I have Outlook 2007 on my laptop and use active sync to synchronize my contacts, appointments, etc..

I do outside sales and set appointments on my cell phone to which I invite attendee’s. This allows me to attach the meeting to an individual. Then when I review activities with that client in six months I will remember what we did last. It also reminds me of the person’s name that I’m meeting with prior to the appointment.
So here’s the problem.
I don’t want to email the attendee’s. I hate that feature. I don’t like when others send me such emails either. The attendee may not even use outlook. Also outlook mobile doesn’t even allow me to add someone to a meeting if they don’t have an email address. I may have set the appointment and attended the appointment prior to syncing with my laptop so when I finally do it sends the email (without any prompts) to the attendee even though the meeting has already occurred (kind of embarrassing). I avoid the problem within Outlook by simply deleting the email address of the attendee’s (on the attendee enrollment form, not in the contacts info page). Outlook tells me something like “can’t send invite. Close and save anyway?” to which I reply yes. No such opportunity in Outlook Mobile.
Any solutions using Outlook Mobile or other mobile software? Hopefully it’s something simple I am missing. Thanks.
