I found out a way to have the right time showing on your phone when using the iphone theme download. I have a 8525 and just rolling the time back 5 hours will fix that problem. I'm sure though if you use your phone for appointments or as an alarm it may screw you up. So you have to decide whats more important.
i'm putting a link in here. if you follow it. it will take you to a patch for the iPhone UI which replaces the launcher & slider exe files. the file sizes are much smaller, but some one used the source code and fixed the time error and recompiled it.
