My Cingular 8125 is in the mail as i am typing. I am going to want to be able to watch movies on my phone, what software do ya'll recommend?

AnyDVD and Clone DVD Mobile with TCPMP on your device!
I own DVD to Pocket PC and the sound is low because you're forced to use AC6 and you have a stereo device. This means that you will only get 2 of the 6 channels of your end result.
AnyDVD runs in the background and strips the copy protection off of any dvd you put in the tray...you then use Clone DVD Mobile to convert to any format according to your device. Since you have the 8125, you will select Windows Mobile and the end result is an AVI file to the size YOU choose. The only thing DVDtoPocketPC has that CloneDVDmobile doesn't is the ability to get rid of the black bars when ripping a widescreen dvd. Not a big deal because you can enlarge the picture to fill the screen before viewing. Either progam will give you a great picture but CloneDVDmobile brings better sound.
