What player can I get that'll play iTunes' AAC format? iTunes just opened in Canada, so I want to be able to buy my tuneage and transfer too my handy dandy 4700.

I cannot find a single AAC player for Pocket PC! Why don't you burn then to a cd-rw and then rip them back of with something like CdEx so that they're regular MP3 files? Not terribly easy, but it might be your only option.
