Project using pocket pc

Hi,

I am currently working on project that uses several sensors to acquire data. I need to find a platform to integrate all these sensors together and process the data. So far, I am looking at several microcontrollers and FPGA boards, but I am also checking pocket pc to see if it's possible to use pocket pc instead. So, my question is, is it possible to have several sensors connected to pocket pc?.. like via serial cable? I've seen many projects using pocket pc but they were only using a single sensor.
