They are different types of processor chips with different architectures. It is important when you install apps to use a version compatible with your processor type. If you go to Settings...System...About, you should see your processor listed in the info.
As a general rule, apps for ARM chips will run on the XScale line, which is developed on the ARM architecture. Software will usually tell you if there is a special compilation specifically for XScale.
If your PPC is running WM2003 or later and is not a phone-equipped device, you are almost certainly running on an ARM or XScale CPU.
