I am trying to use the T9 mode to write
sms, but it doesn't appear in the menu. How can I activate this option or i stall it?
Is there any way to convert my SIM contacts to become phone contacts without having to creat them individually? (like copy/move them from SIM to phone)

Have you tried pressing the * key on your phone while you are writing a message? This will change it to T9. You can also press and hold the * key to get an input menu.
I don't have the i-mate SP5 but if it's like other Windows Smartphones there should be a program called SIM Manager that allows you to copy all of your SIM contacts and SMS messages from card to phone.
Well this is exactly what I am doing, I press and hold (*) but the T9 English option is not available, there is multipress, digits and Arabic options in the input menu but not the T9 one.

Ah-ha! I think the reason why you can't see the T9 English option is because you are using an Arabic ROM version. Have you tried updating your i-mate with the WWE (WorldWide English) ROM? Try to go to ftp.clubimate.com and search for something that looks like this: i-mate_SP5_WWE_2.5.331.2.zip. It actually will depend on if you have an sp5 or sp5m so make sure you download the right one.
See if you can't update the ROM so that is support more languages. Make sure you back up all your data before this since it does clear everything out and starts from scratch!
where can I find the sms inbox in file manager? so I can have a back up of them.

You should try Jeyo Mobile Companion. It allows you to back up your SMS messages to your PC. I'll add it to the downloads section but you can check it out here:

I have installed i-mate_SP5_WWE_2.5.331.2 ROM, and the T9 English option became available, then I installed the Arabic software pack, and the T9 english option disappeared.
This is very discouraging because I am very used to T9 English dictionary and I still need Arabic. And it seems like I can't have them both!!
Any ideas?

You win some and you lose some. Unfortunately from what I understand T9 and Arabic input just don't get along well with each other which is why they are separate in the first place. Someone else might have a suggestion but I believe you have to choose. I'm glad everything else is working for you!
Here's another program for the smartphone that allows you to pull your contacts from the SIM card. The program is called SimImp. Check it out here.
